She will focus on the culinary traditions that have been shaped by migration in Rotterdam, a city full of different communities and stories. Abuarafeh plans to correspond with people through letters, each containing a personal story and a related recipe for a dish. With the letters, she wants to establish a slow, attentive way of acquiring knowledge, in a language that people use to describe their cooking, how they name ingredients, how they measure without exact quantities, how they explain a technique. The research weaves together stories, memories and culinary practices to ask how recipes can serve as archives of histories that often remain undocumented.
